“I started at Le Bernardin in 1991, I didn’t really like the idea of having many places — I’m very passionate about this restaurant. It’s a big challenge to have a big restaurant and delivery the quality and experience that comes with food — I don’t think I could take care of other places and make them as meaningful as this one.”
