“A place that inspired my restaurant a lot was L’Arpège in Paris. It’s the weirdest fine dining experience because they change the menu throughout the day. I know some people who had maybe not the most incredible experience because they went on an off day and I think that’s what was so fascinating to me at that restaurant: I had the most incredible five and a half hour lunch and ate like 12 courses that all had tomatoes because that was all they had! (Laughs) But it was this truly honest thing of, ‘This is what we have today. This is what we’re going to make.’ It felt like nothing was overly manicured and it felt really comfortable and not fussy, and every time I go to Europe, I try to make a point of going there.”
