“If I go to Paris, I always go back to La Tour d’Argent. It’s something like 440 years old now and where I first began my career, so it’s sentimental to me. There’s a signature dish I always have there; the pike quenelles to begin with, and then the duck — La Tour d’Argent specializes in duck. For me, this place represents a certain art de vivre in Paris.”
