Ana Roš:

“Slovenia is slowly, slowly stepping on the world gastronomic map. When I took over Hiša Franko, we needed a full restaurant at least seven, eight months per year to be able to survive, to renovate this old building and to keep the family traditions alive. The big moment that happened this year was the position of 69 on the Pellegrino’s World’s 50 Best Restaurants list. It doesn’t have only to do with the quality of the restaurant — because I don’t think that the quality of the restaurant is better than, say, last year — but you have to prove that you are worth certain awards three times more than in developed countries.”
