“When I was thinking of the concept of the restaurant and how I wanted it to be, I really went back to that feeling of being in someone’s house for a dinner party. In New York, we have all these fine dining restaurants and tasting menus and the food is all different but the experience is the same. It’s all the same cycle. And I think that’s really where I wanted to do something different, was not make it feel like a restaurant but make it feel like being in a living room which is really how my career started — in my own living room with Eureka.”
