Daniel Humm:

“When we first started some 10 years ago we got a review from the New York Observer. One of the lines in the review was, “I wish this place would have a little bit more Miles Davis.” We knew then that to create something special we would need to take inspiration from other places, to create a culture, to create our own language. So we read everything we could on Miles and listened to all his music. We came up with a list of 11 words that we found mostly used to describe him — cool, endless reinvention, forward moving, collaborative, light, innovative — and we really try to embody that in the restaurant. It’s a big part of what we’re doing.”
