“At Core, we’ve got a whole team of people working on new dishes constantly. It actually never stops. We’re open for eight services per week. There’ll always be something coming out of the kitchen and we’re testing stuff all the time — sometimes we’re trying it on our guests, people that we know so they help us develop the menu with us. It’s really about about building relationships, and that’s something really exciting for us.”
