“I’ve found that with Compère Lapin that I was trying really introduce people to flavours that they haven’t tried before. We have things like the conch croquettes, the curried goat, or our cow heel soup — that’s a tradition Caribbean hangover food! I wanted to do something that was from my hometown, where I grew up… It’s fun, it’s playful, and it’s approachable.”
